I apologize to everyone that has ever given me shortbread;
Yours was scrumptious….
But Uncle Doug's is/was the BEST.
He passed away a couple of years ago, but I've had his recipe for years.
I just liked it better when he made it.
Now it's my turn to carry the torch and make the cookies that we so look forward to each Christmas -
which will now and forever be named:
Uncle Doug's Shortbread.
You will need:
- 1/2 cup cornstarch
- 3/4 cup icing sugar
- 1 cup flour
- 1 cup butter
Directions:
Preheat oven to 275 degrees (farenheit)
Sift all dry ingredients together.
Cream in butter.
Roll into balls and then flatten with a fork.
(I dip the fork in icing sugar before flattening)
Refrigerate dough balls until thoroughly chilled.
Bake for approximately 20 - 25 minutes, or until edges are slightly browned.
Makes ~2 dozen cookies.
Try them out and tell me if I'm wrong.
If I'm right - that they are the best in the universe - send a Christmas prayer to my Uncle Doug.
