It started with Chloe asking for them for a snack one day - so I made a batch.
Turned out HARD AS A ROCK.

I thought I'd redeem myself in my daughter's eyes and try a second batch with a different recipe…

I thought I'd better figure out a solution before my rear-end expanded any further, so I posted a request on Facebook for hints and tips to help make them gooey…
Most people said to just use more marshmallows, or fewer Rice Krispies. (which really is the same thing).
I found a recipe online that said to add a bit of milk to the mixture - I added 3 tbsp.
WAAAAAAAY too gooey.
We ate them anyways.
I have finally found the magic recipe for delicious Rice Krispie treats - that will remain gooey (but not too gooey) for days!!
For you, my lovelies, I have even coloured them in green to celebrate both this momentous occasion and St. Patrick's Day in one:
You will need:
- 1/4 cup salted butter
- 50 marshmallows (not miniature)
- 5 cups Rice Krispies (Rice Krispies cereal tastes the best, I did try the no name brand and they had a sort of stale flavour)
- 1tsp vanilla
- 2 tbsp milk
Directions:
1. Butter a 9 x 9" pan.2. In a large saucepan, melt the butter on low heat
3. Add marshmallows and stir until melted and blended together
There are a few key elements to this recipe - the first of which is to melt both the butter and the marshmallows slowly. I put mine on med/low heat. You do not want the butter to brown at all.

4. Add vanilla and milk and mix together.
5. Remove from heat and add cereal until well coated.
6. Using a buttered spatula, press mixture gently (not firmly) into buttered pan
7. Cut into squares when cooled.
I promise - through my many batches of trial and error - these will taste delicious and will stay gooey for a couple/few days.
Mine may last for weeks - we're so sick of eating them.
