Crockpot Tex-Mex Chicken

I was going through my recipe binder the other day, and came across a recipe that looked interesting.

Truth - the photo looked good and I had most of the ingredients - I'm not really one to look for interesting recipes. 

I have to tell you - this recipe got 4 stars! (out of 4)

Ingredients:

1lb boneless, skinless chick breasts, cut into 1" wide strips
2 tbsp taco seasoning mix
2 tbsp flour
1 each green and red pepper cut to bite-size
1 can corn niblets
1 1/2 cups chunky salsa
1 cup Kraft Tex-Mex shredded cheese (we just used the cheddar we had on hand)

Directions:

Toss chicken with seasoning and flour.
Put in slow cooker/crockpot.
Stir in all remaining ingredients except shredded cheese.
Cover and cook on low 6-8 hours or high 3-4 hours.

Stir before serving.
Top with cheese.

Serve wrapped in flour tortillas, spooned over cooked rice or
what we did was crunch up some Multi-Grain Tostitos and spoon it over top.  (I realized too late that we were out of rice).

It  was fantastic - and I live in a house with 3 very picky eaters.
